Egg in a Yam Boat
- ¼ cup spinach
- ¼ crimson bell pepper
- 1 cup of mushroom
- 1 cup ham or candy potato
- 1 egg
- 1 tsp black pepper
- 1 tsp olive oil
- Cooking oil spray (avocado/coconut/olive)
- Preheat the oven to 400°F / 200°C / Gasoline 6.
- The use of a fork, poke holes within the candy potato/yam. Flippantly coat with olive oil.
- Position onto a parchment covered baking sheet and bake within the oven for roughly 35-45 mins or till delicate when poked with a fork.
- As soon as the candy potato has completed cooking, take away from the oven, in moderation let it cool. Minimize it in part and scoop out the candy potato flesh and put aside in your meal prep.
